Slow Cooker Chicken Fajita Soup
Hi Friends!
I know the weather is getting warmer and so most of us aren't really thinking about soup anymore, but this soup is so good I just had to share it. This chicken fajita soup is so easy and quick. Side note I didn't add chicken to mine because I made mine for my lunches for the week and I try and avoid protein in my lunches since I usually have a lot of protein for breakfast and dinner.
Ingredients:
1 pound of boneless, skinless chicken
2 cans of cream of chicken soup
1 jar of salsa
2 cans of corn
1 can of black beans (drained)
1 teaspoon cumin
1/2 teaspoon cilantro
Shredded cheddar
Toppings(optional):
sour cream
green onions
avocado
tortilla strips
Directions:
1. Add chicken to a sprayed crock pot, add all other ingredients except toppings.
2. Let cook 3-6 hours
3. Take chicken out and shred
4. Cook another 20 minutes
5. Serve and add toppings
6. ENJOY!
Like I said this is a quick and easy meal to make and you can add and take out things as you see fit.
